About the class
At the informal conversation at Taurės bar, Niels Lønborg Brandt-Badaire will teach you how to open and enjoy oysters and share his deep knowledge of oyster farming history in Denmark and around the world. Sommelier Simonas Laukaitis will share tips on how to pair wine with natural wines. We will offer three varieties of oysters and three natural wines to taste.
Niels Lonborg Brandt-Badaire
Niels Lønborg Brandt-Badaire says he “has loved oysters as long as he can remember, and working in the fine food industry for over 30 years has ensured that oysters have always been available to him”. Niels’ professional knowledge is also documented though his career; first as director by Løgismose, the first importer of farmed French oysters in Denmark, and now as chairman of the board of HAV, the largest fish monger in Denmark, as well as of Venø Seafood, the leading distributor of wild Danish Oyster. At his home, the oysters are served at least once a week, mainly on Fridays, all year round.
Simonas Laukaitis
While sommelier Simonas Laukaitis of Taurės bar needs no introduction to Senatorių Pasažas regular guests, it’s worth mentioning that Simonas has been known for his particular interest for natural, organic and biodynamic wines. He curates the wine list of Taurės bar and its impressive wine cellar, as well as creates wine pairings for the tasting menus at Nineteen18 and 14Horses restaurants and private events.
