Journey of food

Senatorių Pasažas was born out of sheer passion for sustainability. Every meal served here tells the story of local gastronomy, combining the best flavors with a modern twist and a commitment to responsible living.

But where does the good food start? We start at the farm, Farmers Circle.

Responsible local food system.

Healthy products – great flavours.

Healthy soil

It all begins with caring for the health of our soil and nurturing the millions of microorganisms thriving beneath its surface because good food can only be born in healthy soil. Sadly, people have neglected its needs in recent decades, squeezing out its vital juices. Our generation is responsible for regenerating the soil’s natural health and restoring nature’s biodiversity. At our 780-hectare farm, we follow the rhythm of nature, practice no-till agriculture with minimal intervention, and leave 150 hectares of land untouched for forests, bushes, and wild animals.

In 2025, at Baltic Sustainability Awards, Farmers Circle has been named the best regenerative farm in the Baltics.

Free to roam

Farmers Circle, situated 80 km from Vilnius, is home to 1,500 free-ranging hens, 37 sheep, 7 goats, and 470 Black Angus cattle that graze on grass in vast 500-hectare fields. Oh, and not to forget the cat! Animals are an integral part of holistic farming practices—in other words, old-fashioned farming, just as our ancestors practiced for centuries. Just like them, we move cattle regularly, allowing the pastures to rest and restore. It’s a slower method of growing food, but it results in superb flavors of meat, appreciated by all meat lovers.

Flavours Captured Just Meters from the Vegetable Patch

Can you picture a kitchen where a chef sees a vegetable patch through the window? This is exactly how we make sauces, condiments, relishes, and pickles at our Farmers Circle kitchen lab. The produce comes from our 15-hectare organic kitchen garden, where we grow cabbages, beets, squashes, tomatoes, and many other vegetables. Their flavours are captured at peak freshness by our talented cooks, who craft recipes loved by restaurant chefs, street food chefs, and home cooks alike.

Ethical butcher

Our newest addition to the sustainable food chain is the ergonomically designed on-farm slaughterhouse, created to promote a reduced-stress slaughter process. The production facility ensures that no part of the animal goes to waste—prime cuts become steaks and roasts, while other cuts are used for sausages and pâtés.

Our butchery collaborates with three restaurants—Nineteen18, 14Horses, and Red Brick—that embrace nose-to-tail gastronomy, crafting dishes from all parts of the animal. Meanwhile, our butcher shop in Senatorių Pasažas offers meat to city guests, whether to cook at home or enjoy fresh off the outdoor grill in the courtyard.

Red Brick – A True Soil-to-Table Experience

Red Brick, Lithuania’s first Michelin Green Star restaurant, is located in a converted old manor at the heart of Farmers Circle and offers the opportunity to enjoy farm-to-table gastronomy at its source. Arnór Ingi Bjarkason, the restaurant’s head chef from Iceland, lives by the principles of sustainable gastronomy, outlined in his manifesto published on the restaurant’s website. He cooks with produce grown on the farm, forages and hunts in nearby forests, and strives to eliminate waste while avoiding unnecessary logistics. Dinners at Red Brick are a celebration of locality and seasonality. Guests are invited to reconnect with the land that grows their food, linger by the bonfire after dinner, and even stay overnight in the restaurant’s own 15-room guesthouse, Sleepy Horse.

From Farm – Directly to the Heart of Vilnius Old Town

Situated in a 400-year-old mansion in Vilnius Old Town and given a new lease on life in 2020, Senatorių Pasažas is the first sustainable gastronomy hub in the Baltics. It houses a bakery, butchery, natural wine bar, street food stall, bookshop, farm, and interior decor shops, as well as two renowned restaurants—Nineteen18 and 14Horses. Each dish served here is crafted using responsibly grown ingredients, mostly from our own farm, Farmers Circle.

We see Senatorių Pasažas as a bridge between the farm and the city—inviting people to be grateful for nature’s gifts and inspiring them to live responsibly.

Native plants and a strict no-plastic policy define the décor of Senatorių Pasažas’ yard, shops, and restaurants. You might notice a bare bush in winter, but that’s simply how nature looks in a Nordic country. The highlight of the space is its natural Christmas tree, which attracts thousands of visitors, both local and international. Every year, it’s adorned with the same simple lights that have stood the test of time, bringing joy to many.

We are immensely proud to have been named the best food destination in Lithuania in 2024!

Truly, honestly local baker

Grūdas bakery is the first to open its doors in the morning, greeting guests with freshly baked sourdough, pastries, and coffee. Locality is celebrated every step of the way—Grūdas bakers source flour from small Lithuanian farms and go to great lengths to find creative local alternatives to foreign ingredients like lemon, cinnamon, almonds, and even chocolate.

Unsold bread is repurposed at 14Horses restaurant, where it’s used to make house kombucha and koji.

Farm produce close to home

Our farm shop, Dirva (Lithuanian for “soil”), is the heart of Senatorių Pasažas food hub. Direct deliveries from Farmers Circle guarantee the freshest vegetables and fruit, often picked the same morning. It’s also a showcase and tasting ground for everything produced at the farm—from dips, spreads, and relishes to freshly fermented kimchi and homemade sausages.

Everything you find at Dirva’s shelves is sourced from responsible makers—organic dairy farms, sustainable fisheries, and ethical wine and grain producers. Recently, Dirva’s fridge has been stocked with homemade weeknight meals, crafted from the same high-quality ingredients.

Casual, friendly food

Simply cooked, seasonally changing meals that can be enjoyed anywhere in the vibrant yard are a great way to taste high-quality ingredients in their purest form. Muu Grill serves some of the best burgers and steaks in town, giving guests the opportunity to enjoy exceptional grass-fed beef.

During the Christmas season, the yard transforms into a lively market, offering everyone’s favorites—hot wine and cider, waffles, hot dogs, soups, and more. On long summer evenings, guests enjoy freshly tossed salads made with farm-grown ingredients, paired with a glass of wine from the natural wine bar, Taurės.

Award winning restaurants

Our two award-winning restaurants—Nineteen18 and 14Horses—are driven by the same principles of responsible gastronomy, built on flavours grown in healthy local soil. Beyond the exquisite craftsmanship that goes into every dish, the teams at both restaurants are committed to reducing unnecessary waste, practicing nose-to-tail and root-to-stem methods. Stories of Lithuanian heritage foods and ingredients are intertwined with modern culinary techniques and beautiful presentation.

These efforts have been recognized by both local and international critics. In 2024, Nineteen18 was named the second-best restaurant in Lithuania by 30 Best Restaurants, listed among the 1,000 best restaurants in the world by La Liste, and awarded one Michelin star. 14Horses was praised for its balance of price and quality and received the prestigious Michelin Bib Gourmand award.
